U.S. Coast Guard–inspected and –certified, the Orlando Princess, an 80-foot catamaran, and Canaveral Star II, an 85-foot party fishing boat, harbor helpful, hint-dropping crew members to help ensure a successful voyage at sea. Excursions embark seven days a week to target mangrove snapper, grouper, sea bass, and other fish, and eager anglers are equipped with fishing licenses, rods, reels, tackle, bait, and gill-shaped fish whistles. To celebrate hard-fought battles with finned foes, adults can consume unlimited beer and younger voyagers can sip on unlimited soda, with half-day trips including lunch, and full-day treks supplying breakfast and lunch. Guests can relax on the sun deck or retire to air-conditioned cabins after catching their prized fish, which can either be consumed or used to prevent a fireplace mantle from floating away. Half-day excursions depart at 10:30 a.m. and return at 4:30 p.m., and full-day jaunts depart at 8 a.m. and return at 5 p.m.

Families, friends, or up to five recently reunited astronaut-campers can practice the skills required to catch and clean aquatic fauna, located with the aid of an on-board Hummingbird fish finder that touts the olfactory skills of a hound dog. Central Florida Fishing forecast, July 1, 2011

FRESHWATER: The Harris Chain has been very good for bass and panfish. Bass are most active at daybreak. Work near bait pods, docks and the edges of grass beds with spinnerbaits, swimbaits and plastic worms. A few fish can be caught on plastic toads/frogs and buzzbaits as well. Switch to flipping soft plastics underneath cover at mid-morning through the afternoon. Drift the lakes with crickets for plenty of bluegills and shellcrackers. If you find an area where these panfish are bedding, anchor up and use redworms or break out the fly rod and use small bug flies. A Beetle Spin lure will work well also.
SALTWATER: Anglers are catching plenty of snook at the Sebastian Inlet at night. Snook are out of season and all catches must be returned to the water as quickly as possible. A few slot and over-the-slot sized redfish can be caught from the northern jetties. Use pinfish or fingerling mullet for both redfish and snook. Use shrimp just off the rocks on the northern side for mangrove snapper, black drum and a few flounder.
